Helmets are a type of Armor in Mass Effect 3. Helmets protect the player's head and improves defensive capabilities. You can toggle on or off the option to see your helmet or not during the game. That's just an esthetical preference, because the equipped helmet bonuses will be provided regardless of your choice.
